Downtown Langley City has three proper noodle houses within a walk of each other, and they’re different enough to be worth knowing apart.

Langley Vietnamese Cuisine, 203 Street

The downtown institution — same family since 1998, seventy-odd seats, and the room with the most regulars. People come for the beef broth and the portions; the large is only slightly more than the regular. The grilled pork and spring roll vermicelli is the other signature. Parking in the plaza is tight at noon; the locals’ move is the lot across 203 St.

Pho Binh Minh, north end of 203

A small, family-run room where the welcome is part of the meal. The thing people mention most is how much meat lands in the bowl, and the fresh chilies on the table. Free parking out front, and it’s open until 10 on weeknights, which nothing else on this list is.

Pho 777, right on Fraser Highway

Big bowls, one size, quick turnaround, right in the one-way core. The broth runs lighter than the other two, which suits people who like to build their own with hoisin and sriracha.

How to do it

One bowl per stop, the same bowl each time (beef pho, regular), spread over a week so nobody has to be rolled home. Go at 11:30 or after 1:30 — all three fill up at noon on a weekday.

We’ll eat the three bowls and score each on broth, value and wait. This page gets the numbers when we have them.
